Albuquerque restaurants participate in 'Vegan Chef Challenge' through July 31

Albuquerque is hosting the inaugural Vegan Chef Challenge now through July 31. 

The event is presented by the Animal Advocacy Corporation and invites the public to fight animal cruelty and climate change over a 10-week program by adopting a vegan diet, according to a report by KRQE News.

"The Albuquerque vegan challenge is a month-long challenge all of July," Victor Flores, Western Community Outreach specialist told KRQE News. "A variety of different restaurants and chefs will be presenting different recipes and (the event) is not just for vegans. (It) is for all to enjoy. There are about 30 restaurants participating and the goal is for the restaurants to keep these vegan options.”

The challenge will provide participants with information about how they can become vegan, KRQE reported. Each week, participants will learn how to replace one of their favorite animal-based foods with a vegan alternative. They will also get nutritional tips and more to make the challenge less overwhelming.
