New Mexico Business Coalition (NMBC) has highlighted La Posta De Mesilla Restaurant & Cantina in its latest business spotlight, recognizing the establishment’s longstanding presence in New Mexico. La Posta was founded in 1939 by Katy Griggs as a small restaurant with four tables and simple offerings. Over the decades, it has become a well-known dining spot, attracting visitors from various backgrounds, including public figures and celebrities.
The restaurant’s history includes notable moments such as the U.S. Navy naming the galley aboard the USS New Mexico submarine after La Posta. The business remains family-operated, with Katy Griggs’ great-niece Jerean Camunez Hutchinson, her husband Hutch, and their children Christopher and Elena now running daily operations.
La Posta is recognized for its New Mexican cuisine and award-winning margaritas. It has been listed among USA Today’s “Ten Great Restaurants for Mexican Food” in America. The restaurant operates out of a historic adobe building that is on the National Register of Historic Places.
